The stew is a dish very typical of cold times, a stew with meat, legumes and vegetables, and is a complete meal for children. This recipe from cooked Gallego it is prepared especially in Carnival, to combat the cold of the Spanish region of Galicia.

To make the Galician stew, typical ingredients of the region are used, such as pork shoulder or turnip greens, although you can vary the traditional recipe and get an equally nutritious and delicious Galician stew for your children.

  • 500 gr. chickpeas
  • 500 gr. pork ribs
  • 500 gr. beef
  • 750 gr. of lacón
  • 1 pig's ear
  • 1 piece of bacon
  • 4 sausages
  • 7 large potatoes
  • 2 bunches of turnip greens

1. The day before preparing the stew, put the salted pork in a pot (the pig's ear, the shoulder, etc.), changing the water every several hours, and in another, soak the chickpeas.

2. Put plenty of water in a large pot and heat. When it starts to boil, add the chickpeas, the pork ribs, the veal, the shoulder, the pig's ear and the bacon.

3. Let it cook all together for about two hours, removing the meat as it is tender (depending on the type, it will take more or less).

4. In another pot put water to heat. Wash the turnip tops (you can substitute cabbage) and the potatoes, peel the latter. When it comes to a boil, cook the potatoes with the turnip tops or cabbage and the sausages. Leave about 20 minutes until tender.

5. When serving, separate the chickpeas, pork, veal and vegetables on one side.
